One Less Box to Pack, One More Meal Shared...

A new challenge is unfolding in my kitchen, not one inspired by social media or a cookbook, but one born from my impending move across an ocean.
I’m calling it the Pantry Challenge.
The rules are simple: between now and my move to Ireland, I am determined to cook my way through everything tucked away in the pantry, freezer, and cupboards. No more buying jars and bags of ingredients “just in case.” Only essentials now, fresh produce, protein, milk, and eggs, whatever it takes to transform what I already have into a meal.
It turns out I’ve accumulated quite the collection over the years: a bag of lentils here, half a jar of barley there, three kinds of rice, four varieties of vinegar, and enough beans to feed a small village. Every shelf holds a little reminder of recipes made, recipes planned, and recipes that never quite materialized.
Rather than seeing it as one more thing to-do, I’ve decided to make it an adventure. Every meal begins by opening the cupboard doors and asking, “What can I make with what is already here?”
It is surprisingly satisfying. There is something deeply comforting about using what you have before starting over, one less box to pack, one less shelf to empty, and one more good meal cooked before this kitchen becomes someone else’s.
For now, the Pantry Challenge is officially underway.
Several of you have already asked for the recipes behind these weekday creations so, I’ll be gathering all the recipes into a single roundup right here every Sunday.
Think of it as your weekly Midlands cooking blueprint and yes, when I get across the ocean, there will be plenty of potatoes.
The very first recipe roundup drops this Sunday. Until then, we’ll see what surprises are hiding in those cupboards.
