Amazing Chicken

From the moment the Irishman and I started talking,  our shared passion for food became a focal point. Despite his discerning taste buds, he has an uncanny ability to discover hidden culinary gems. For the Irishman, "Every meal tells a story", which is why he embarked on a journey of restaurant exploration and started his own blog called "The Nose Knows".  We will delve deeper into this fascinating venture a little later... I want to talk about "amazing chicken".


The Irishman has created his own unique twist on Chicken Milanese, which he affectionately calls Good Chicken. I can't help but be delighted every time he offers to whip it up for us, as it never fails to tantalize our taste buds with its incredible flavor.


One evening, I decided to take matters into my own hands and prepare my version of the renowned Chicken Milanese. To my astonishment, after taking the very first bite, the Irishman proclaimed it to be nothing short of amazing—and so, my creation was henceforth referred to as Amazing Chicken. 

Since that fateful night, Amazing Chicken has become a regular star in our dinner rotation. The Irishman has developed an insatiable love for it, to the point where it has become the highly sought-after centerpiece for dinner parties. 


Accompanying the chicken dish, I often serve a combination of roasted potatoes and a green steamed vegetable. Alternatively, I opt for rice, sautéed mushrooms, and peas all folded together, delicious!

Amazing Chicken is an easy meal to make and can be scaled up for parties and can even be made ahead.  Make sure to make extra as the chicken is delicious in rice bowls or a late-night chicken sandwich, on Brennan's bread of course...


Amazing Chicken

Boneless, skinless chicken breast (I split and pound the breasts and usually make at least two full breasts (split) per person at least...Italian Seasoned Breadcrumbs and Panko Breadcrumbs

Grated Pecarino Romano Cheese, (I usually grate my own)

Eggs

Salt, Pepper, Vegetable Oil, and Olive Oil


Split and pound the chicken breasts slightly.  Beat a few eggs in one bowl and make a mixture of the bread crumbs and cheese.  Season the crumb mixture with salt and pepper.  I usually do two parts crumbs to one part grated cheese.

Dip the chicken in the egg and then the breadcrumb mixture. Allow the breaded chicken breasts to rest for a few minutes before frying them.  

Fry the chicken in a combination of vegetable oil and olive oil and always use a good old cast iron skillet to fry them in.  Preheat your oven to *450, this is how you will finish the chicken after flash frying them.


Make sure the oil is very hot before flash frying the chicken. Fry one side of the chicken till golden brown, about 3 - 4 minutes, flip over and fry another 3 - 4 minutes. You are looking for a deep golden brown.  Place the cutlets on a sheet pan and hold them in the hot oven while you fry the other pieces of chicken.



Season the cooked chicken with a generous sprinkle of Maldon Sea Salt, before serving.  The Irishman and I hope that once you take the first bite you will say that the chicken is as Amazing as we think it is!
