Hello, this is Laura, an American with Danish roots, a San Francisco heart, and a pending Irish postal code. For the last several years,  I have cooked and written about Feeding the Irishman in San Francisco, sharing stories of food, Scrabble, and the great debate over whether potatoes are a vegetable or a spiritual experience.

Last year, we stopped dreaming and started packing. The Irishman has already landed at Cedar House, our new home on the canal in Tullamore, while I’m currently still in San Francisco surrounded by bubble wrap and nostalgia. I’ll be joining him this fall once the final boxes are taped shut.

Right now, I’m navigating the long distance transition,  while the Irishman is scouting the Irish midlands, and I’m prepping for a life of green landscapes and new traditions. This is where I write about the journey from city fog to canal side living. Welcome to the wait. There will be plenty of potatoes soon.
